Vegetables Pancakes with Poached Eggs Recipe:

Ingredients:

  • Eggs 3
  • Milk 60 ml
  • All-purpose flour 60-80 g
  • Baking powder 1/2 tsp
  • Salt 1/2 tsp
  • Grated zucchini 60 g
  • Grated carrots 60 gr
  • Olive oil for cooking

Method:

The versatility of this dish allows you to use any available vegetables. I used zucchini and carrots in this batch, but feel free to use any veggies you have in the fridge!

  1. Whisk 1 egg and milk in a medium-sized bowl.
  2. Whisk the flour, baking powder, and salt in another bowl to combine. Add the zucchini and carrots and toss to coat the vegetable pieces with flour.
  3. Pour the vegetables/flour mixture into the egg/milk mixture and stir to combine.
  4. Preheat a pan and add a bit of olive oil.
  5. While preheating the pan, boil the water for the poached eggs.
  6. Place 1 tablespoon of vegetable mixture in a pan and cook for 3 minutes on each side or until golden brown. Repeat with the remaining batter. Let it rest on a paper napkin and let the oil drain.
  7. Cook poached eggs in your preferred way.
  8. Place pancakes on a plate and place the egg on top of them. You can add some plain yogurt or any sauce you prefer.
