Eggs and Vegetables Recipe:

Ingredients:

  • Eggs 4
  • Vegetables (any leftovers in the fridge) 100-200 g
  • Fresh greens 2-3 branches
  • A pinch of salt
  • Freshly grounded black pepper or a pepper mixture to taste
  • Olive oil or butter for cooking

Method:

  • Cut the vegetables into small pieces and fry over low heat in olive or butter until soft
  • Lightly beat the eggs with a pinch of salt in a separate bowl and pour over the roasted vegetables. You can break the eggs directly into the pan to leave the yolk unbeaten.
  • Cook until your favorite level: if you want the yolk to remain soft, do not cover, otherwise cover and lower the heat.
  • Add ground pepper and chopped greens a minute before it’s cooked.
  • You can serve it with your favorite cheese, avocado slices, lightly salted salmon, green salad, olives, or any snack you like.
  • Serve with a baguette or toast!
