Ingredients:

  • Baked beetroots, peeled and sliced 2 medium-sized
  • Mixed young green salad leaves 4 cups
  • Goat cheese log, crumbled 1 small
  • Sicilian orange, peeled and segmented 1
  • Toasted walnuts or pumpkin seeds 1/4 cup

For the dressing:

  • Extra virgin olive oil 2 tbsp
  • Salt and pepper to taste

Method:

  • In a large flat salad bowl, combine the mixed young green salad leaves, crumbled goat cheese, and segmented Sicilian oranges.
  • Add the roasted beetroot slices to the salad plate.
